Easter Recipes: Traditional Roasted Lamb Shank with Vegetables & Brazilian Baked Cod

Roasted Lamb Shanks with Vegetables

Steps:
- Prepare the marinade: In a small bowl, combine pepper, honey, paprika, peanut oil, shallot, garlic, salt, and a pinch of rosemary. Place the leg of lamb on a large plate and spread the marinade evenly over the leg of lamb. Wrap the marinated leg of lamb in plastic wrap and rest in the refrigerator for at least 3 hours. - Prepare the vegetables: In a baking dish, arrange the sliced zucchini and carrots in alternating regular scales. Sprinkle with salt and pepper. You can also add 1-2 cloves of garlic according to taste.
- Preheat the oven at 220°C(428℉). Take the marinated lamb shank out of the refrigerator, and spread the remaining marinade on the bottom of the dish over the carrots and zucchini on the baking sheet.
